GREAT RECIPE
Let's start a thread of shared recipes to help us get back on track. I'm going to try this one this weekend during my Detox Challenge:
Vegetable Quiche Bars
Mix together:
1 LB. package of chopped broccoli (defrosted), or the equivalent of freshly steamed broccoli
1/4 C. red bellpepper, chopped
1/4 C. onion, chopped
3/4 C. egg substitute
3/4 C. low fat cheese, shredded
Pour mixture into a loaf pan that has been sprayed with olive oil. Bake at 350 degrees for approximately 30-35 minutes. Allow to cool. Slice into 8 bars or 12 squares.

Spinach Feta Personal Pizza
1 - 8 inch flour totilla
2 tablespoons of pizza sauce
10 spinach leaves, fresh
1 roma tomato
1 tablespoon feta cheese
2 tablespoons low fat mozzarella cheese
Turn oven to broiler
Spray cookie sheet with spray margarine and place tortilla on sheet
Toast torilla lightly on both sides
Top tortilla with sauce, spinach leaves, and tomato slices
spinkle on feta cheese and mozzarella cheese
Place back in broiler until chesse melts
