Easy High protein mock cheese danish...

Okay, this is something I used to eat on Atkins which is just divine, but I've adapted it to be low-fat and higher protein. It is very simple. 2 oz. fat free Philly cream cheese, stirred smooth 1 egg, beaten into the cream cheese 3 packets of Splenda dash of vanilla dash of cinnamon Mix all ingredients smooth in a custard cup. Put in microwave on high for 90 seconds. It will come out with a little moistness from the cream cheese. This is called a mock cheese danish but it is more like a custardy cheesecakey type thing. Now if you want to have full fat cream cheese that is fine, but it just adds calories. I like the FF Philly but I did feel it could have benefitted from maybe 1/2 oz of the real thing. This is the breakdown of nutrition: Total calories: 145 Fat: 5 grams Protein: 16 Carbs: 5 This is an easy way to get some protein in as it tastes good and goes down easy. This could definitely qualify for the soft food phase as well. Dina

Hey, Dina. I made it, but I think I put too much Splenda in. I don't have "packettes", just a big bag. Either way, it was pretty jummy. Yes, more like custard than danish. Thanks again!

Well, funny you should mention this but I made it last night and used 3 packets and found it just about right, but I was eyeballing the cream cheese as well. That can affect the sweetness level. The original recipe called for 1 packet of Splenda but I found that way too bland for my sweet tooth! Dina

You could replace the splenda with any of the flavored sugar free syrups for a change of pace. (My favorite is Davinci syrup--caramel and raspberry are great!) Joy -35 lbs

Shouldn't be a problem if that is what you like. I just put in what I use. Should be something that can hold up to the heat though. Dina
