Chinese Salad

I don't eat as much Chinese food as I used to, mostly because of the rice. Before the symphony the other night, we stopped at a Noodle Cafe. I didn't think I'd have a lot of protein rich choices, but I was wrong. These guys serve just about anything they make over salad instead of noodles or rice if you want it. I had Hot Thai Beef Salad and it was wonderful. From now on, I'm going to dump my leftover Chinese food over greens. I thought it sounded kinda weird, but turned out to be great. Connie

This is a great choice and one I do often. I have even had tacos in which I used lettuce as the shell. Also, when making your own, I don't cook American rice very often. American being long grained, instant and such. When I use rice, I make the short grained varities which have far less simple carbs ( ie sugars). As I cook for my family, I do use rice in quite a few meals. I have a rice cooker, and it makes cooking rice much easier and quicker. Thanks for the comment, it was a great one.

Thai lettuce wraps are one of my favorites at Chili's. (OK, not Chinese, but when you live in Arkansas, it is close enough to count!)
