Cauliflower potato salad & Cauliflower mashed potatoes

This stuff is FABULOUS so give it a try! **Cauli-tater salad** 1 head of cauliflower cubed and cooked tender but not mushy 1 dozen eggs, boiled and sliced 1 small sweet onion dill pickle, diced, added to taste Olives, if preferred mustard to taste mayo to taste Vinegar salt/pepper to taste Take cubed cauliflower and let soak in vinegar or dill pickle juice. I use a combo since the vinegar gives more punch. I let it soak for oh - at least 15-30 minutes or so. Once soaked, drain VERY WELL. Put it in a strainer and let it set aside so it dries well. If it's not drained well, it will end up soupy. The rest is to taste. I add mayo and mustard and mix with diced onion, olive & pickle first, then add to the cauliflower and mix well. I add the egg last and toss it so as not to break it apart too awful much. You can salt and pepper as you like. I like savory potato salad, but if you like it sweet, you could use Splenda or the sort to give it that sweetness. The added eggs up the protein level while giving substance. The biggest trick is soaking the cauliflower and draining it well. Once you get that down, it will be great. Sometimes I use very few of the florets and just the chunky base as the base of the salad, but I do admit the florets soak up more tang. It depends on if you want to fool the eye as well as the tastebuds. ***Cauli-Taters*** These are very simple....very easy! All you do is cook your cauliflower to a very soft mushy texture, drain very well and add butter, salt and pepper to it and mix or blend. (Blended is better) Just make sure you drain well and you'll be fine. These are fantastic as a mashed potato replacement. You can also add cheese and/or garlic to punch it up a little. Dina

Hey Dinka Doo!!! Love the nic!!! Thanks for posting this recipe for "potato" salad since I always make potato salad for gatherings and should learn to make one everyone can eat ya know? I am tempted to try the mashed as well since I love tateys and they are not so good...
