Cauliflower - a cool discovery!

Well, I had already had about 633 calories today per fitday and I was starving this evening...wanting more. So I saw some leftover cauliflower and heated it up, put some spray butter and salt on it and dug in. You know the coolest thing about that? I CAN FILL UP ON VEGETABLES NOW! Before this surgery I could never get full of vegetables before I felt physically unable to eat more out of boredom or whatever. Now I can eat a bowl of cauliflower and feel full and satisfied. How great is that? I mean - suddenly I realize what all those skinny people can do to diet...heck their stomachs are small and so they CAN get full and satisfied off vegetables. I never was able to. I was always hungry after because I had a bottomless pit. I always felt those magazine articles were full of crap telling us to fill up on veggies first, but now I understand....they are just geared toward people who have 10-20 lbs to lose...not 100+!!! Great discovery Dina!!! I have seen a recipe to make mock mashed potatoes with cauliflower... I bet there are a lot of good things you can create that you would have never thought of before.. You're thinkin' like a skinny person!!! How awesome is that?!?!?!?!?!

My local grocery store sells mashed cauliflower now... in the deli and I had some and it is deee-licious and a great substitute for mashed potatoes.....which I can't have yet.

Oh Kathy! I am an old-time Atkid (one who follows Atkins) who once had a very popular low-carb website (took it down awhile ago, but have my recipes still up on www.javajabbers.com) and I have a plethora of accumulated and self-created recipes. One of my favorite ingredients is cauliflower because it is high in fiber and low in carbs and calories. Did you know that you can make a mock potato salad with cauliflower? It is so real tasting that you wouldn't know you aren't eating potato salad! I took it to a potluck one time and no one had a clue...it got devoured! I also make a killer cream of cauliflower soup, I also make the cauli-taters and also make a "rice" out of cauliflower. It's nice when you have stir fry. Guess you could call me the Cauliflower Queen! Dina

Dina, Could you please post the recipes for the mashed potatoes and mock potato salad? I did not find them on the website you mentioned and these would save my life...especially this summer. Thanks Roz

in a hurrythis morning so i bookmarked your page--what a cutie your mason is!!!! what is the pian playing? liove it? your recipes look great and i appreciate you sharing!!! i loved cauliflower preop but stayed away due to gas--is this a prob post?? cuz i'm having enuff gas probs- don't need more!!!!! margo--still titleless .... not to be confused with the golfballs- titelist! 11 days in newpouch and lovin it!!!!!

AND, there is Protein in Cauliflower - not much, but half a cup is 1 gram!! And it's a vegie that for me, goes down real well!! mgm
