Those homemade tortillas from Trader Joes are really good... I use them to make this black bean chilaquile casserole that I got from Eating Well magazine. Corn tortillas are high in fiber, and if you pair them with a good protein, like some black beans and low fat cheese you can make something great out of it. We need some carbs in our life, the right kind, and in moderation.
Here's the recipe if you want, even my kids like to eat this.
Instead of using frozen corn, I put in an extra zucchini to lower the carb/sugar content.
1 tablespoon canola oil
1 medium onion, diced
1 medium zucchini, grated
1 19-ounce can black beans, rinsed
1 14-ounce can (no salt added)diced tomatoes, drained
1 1/2 cups corn, frozen (thawed) or fresh
1 1/2 teaspoon ground cumin
1/2 teaspoon salt
12 corn tortillas, quartered
1 19-ounce can mild red or green enchilada sauce
1 1/4 cups shredded reduced-fat Cheddar cheese
1. Preheat oven to 400° F. Lightly coat a 9-by-13-inch baking dish with cooking spray.
2. Heat oil in a large nonstick skillet over medium-high heat. Add onion and cook, stirring often, until starting to brown, about 5 minutes. Stir in zucchini, beans, tomatoes, corn, cumin and salt and cook, stirring occasionally, until the vegetables are heated through, about 3 minutes.
3. Scatter half the tortilla pieces in the baking dish. Top with about half the vegetable mixture, about half the enchilada sauce and half the cheese. Repeat with one more layer of tortillas, vegetables, sauce and cheese. Cover with foil.
4. Bake the casserole for 15 minutes. Remove the foil and continue baking until the casserole is bubbling around the edges and the cheese is melted, about 10 minutes more.
Per serving: 245 calories; 10 g fat (4 g sat, 4 g mono); 23 mg cholesterol; 31 g carbohydrate; 9 g protein; 6 g fiber; 351 mg sodium; 272 mg potassium. Nutrition bonus: Vitamin C (25% daily value), Fiber (24% dv), Vitamin A (15% dv). Exchanges: 2 starch, 1 vegetable, 1 lean meat, 1 fat; 1 1/2 Carbohydrate Servings.

NOONE FLIRTS WITH ME AT THE GYM lol my friends say they are intimidated by my beauty lmao WHATEVER....hahaha and i am one of those women who carry all there weight above the waist so my ass is SMALLLL ugh and my boobs are small but i still have thickness in my midrift lol ugh BUT i still think i look great and feel great!!! What your trainer says about eating more since you're exercising is totally true. I've just had up my calories to 1500 a day to kick start my loss again. I just started this a little over a week ago and I lost 3 lbs this last week. It seems if you have to get that perfect balance between what you take in and what you use up to get the premium weight loss. (sigh) I never thought I would be in a situation where I would have to eat MORE to loose weight.
I agree about the "fat brain" too. The weirdest thing to me is how people are treating me now. Guys now hold open doors and smile at me. Women at the gym who ignored me before, now talk to me. Guys at the gym flirt with me while I'm working with weights. I wanna smack them and say "Can't ya see I'm busy?"
My husband is totally into fat chicks. He likes his women on the larger side. So, needless to day, he's had a few problems with my weight loss. I still have large hips. He likes big ole butts. I think he's liking the new me though. Just the other day he says "Ohhhh! I can get a larger proportion of your ass in my hands!" And, today he told me I was looking exceptionally cute.

So I know from many post that we all are in the stall portion of our journey and we all hate it lol. I with help from my trainer have started a new work ot program to try to jump start my loss.
Is anyone having bouts of "munchies" its bad i try to make good choices lol Some times i munch on chewable vitamins to keep my mouth busy my trainer says because i work out it can induce more intake to supply me with energy to support the callories i am burning....I dont know all i know is i feel like im eatting alot but when i do my fit day (every once in a while) im not its weird. Im not gaining and i am losing but very very slow.
AND has anyone noticed the bigger size you are the truer to one size you are like if your a 22 your a 22 and you cant wear a 20 but now that i am in 10's i can also wear 8's and some 10's are HUGE and some 8's are SUPER SMALL lol weird. and remember hearing skinny people say i need to lose 5 or 10 pounds and we would be like listen B**** i need to lose 100 lol. but now 5 or 10 pounds makes a huge differance where when i was 271 5 or 10 pounds would have been NOTHING!!!! lol
I was very involved in my "fat community" and i found that i said FAT all the time...."Fat girl hugry" "this bath room is not fat friendly" "So are you into fat girls" (this ome was my favorite lol) I went to fat dances and fat vacations with other fat people.....NOW i am horrified to say F.A.T.! i feel like i am kicked out of the fat community...(not that i am upset) but i still have a lot of "overweight" friends WHO now call me skinny B**** lol and i love them all but im differant and i feel weird lol I was so "happy with who i was" (lol didnt we all say this?) but i obvioulsy was not and now being that i was the Poster Child for BBW WOMEN i feel like i abandoned them. I still go to the fat dance everyone in awhile lol although i get "looks" im not one of them anymore...i keep saying "dont take my fat club card i still have a fat girl brain"
Well i just wanted to say hi to everyone and give you all some thoughts hope all is well.

I still feel queasy if I eat solid food first thing in the morning. So, I have an EAS coffee house protein drink instead. Also, milk makes me feel ill if I drink more than an ounce or two. Have you talked to your surgeon?

Carbs are ok in moderation. I think that's what we all have to learn now. Moderation is the key to our long term success. Try having a bit of fresh fruit. Your body is probably starving for carbs. Fresh fruit has complex carbs that are good for you. So, maybe a bit of fresh fruit will help with the craving. I have half of an apple each morning. YUMM! And, fiber!!!
