Please knock some sense into me...
Somebody please help me. I can't kick this carb thing. I'm pretty sure that's why I'm on another dreaded plateau for the 50th time since surgery.
I need some words of encouragement. Every day I tell myself that I'm going to get back on the program and every day it seems like I just can't get it together.
Like this morning for instance... I was going to be really good and have my egg and my yogurt, but instead what do I do... I reach for the Handmade Tortillas from Trader Joe's. What is wrong with me???!!!
I think I just need to get rid of that kind of stuff all together. I thought I could be strong enough to back away from the tortillas but it's not happenin. It sucks.

YES CARBS ARE EVIL!!!!! but i think some one correct me if i am wrong. we can have some. JUST DONT OVERLOAD. Some carbs are good. OK BREAD RICE BAD BAD BAD!!! i have an addiction to crackers lol i dont eat ANY bread or rice but i eat crackers lol I wish i could say come on girl its easy you can do it...AND I KNOW you CAN do it. but yea HELL YEA its hard. carbs are darn good. and they fill you up fast. Just really try and you can do it remember you DONT wanna go back to what you were an dyou want to lose more than you have. YOU CAN DO IT!!!!!

You don't have to kick the carb thing. You just have to know when to stop! I'm sure you are tired of being on that plateau thing so, you're gonna have to get moving some more or give up something for a little while. Everybody falls off the wagon sometime. But, you know what? You can pick yourself up and climb back on. Don't give up and keep trying. You're going to slip up every now and then. Just put a picture of your old self on those Trader Joes and I bet you will put them right back down!!! lol That's what I'm going to do when I have surgery. I'm going to post one of my fat pictures on everything I'm not supposed to eat. And a skinny one on stuff I should be eating... LOL Maybe one of each on the fridge to remind me of how far I have come to go back. I'm like you too, when you say get rid of that kind of stuff. I have already told my daughter, she's 13 and always conscience of her weight, that I am not buying all that junk anymore. So, she will have to go down to her mamaws house -- two doors down, and get that stuff....LOL Or, her and my husband can go down there to eat EVERY night.... LOL I don't care, just keep it away from me until I feel I can handle it. Which may be never, but I will be in control. And, you are in control too!!! So, keep you hands off!!! lol Don't make me come down there!!! LOL You can be strong -- look how strong you were in the beginning!! You can do it!! No excuses!! Buckle Up!! Get a grip!! lol Whack! That's me knocking some sense into you.... lol Get yourself back on track--I'm going to need you to whip me into shape later on.

Those homemade tortillas from Trader Joes are really good... I use them to make this black bean chilaquile casserole that I got from Eating Well magazine. Corn tortillas are high in fiber, and if you pair them with a good protein, like some black beans and low fat cheese you can make something great out of it. We need some carbs in our life, the right kind, and in moderation.
Here's the recipe if you want, even my kids like to eat this.
Instead of using frozen corn, I put in an extra zucchini to lower the carb/sugar content.
1 tablespoon canola oil
1 medium onion, diced
1 medium zucchini, grated
1 19-ounce can black beans, rinsed
1 14-ounce can (no salt added)diced tomatoes, drained
1 1/2 cups corn, frozen (thawed) or fresh
1 1/2 teaspoon ground cumin
1/2 teaspoon salt
12 corn tortillas, quartered
1 19-ounce can mild red or green enchilada sauce
1 1/4 cups shredded reduced-fat Cheddar cheese
1. Preheat oven to 400° F. Lightly coat a 9-by-13-inch baking dish with cooking spray.
2. Heat oil in a large nonstick skillet over medium-high heat. Add onion and cook, stirring often, until starting to brown, about 5 minutes. Stir in zucchini, beans, tomatoes, corn, cumin and salt and cook, stirring occasionally, until the vegetables are heated through, about 3 minutes.
3. Scatter half the tortilla pieces in the baking dish. Top with about half the vegetable mixture, about half the enchilada sauce and half the cheese. Repeat with one more layer of tortillas, vegetables, sauce and cheese. Cover with foil.
4. Bake the casserole for 15 minutes. Remove the foil and continue baking until the casserole is bubbling around the edges and the cheese is melted, about 10 minutes more.
Per serving: 245 calories; 10 g fat (4 g sat, 4 g mono); 23 mg cholesterol; 31 g carbohydrate; 9 g protein; 6 g fiber; 351 mg sodium; 272 mg potassium. Nutrition bonus: Vitamin C (25% daily value), Fiber (24% dv), Vitamin A (15% dv). Exchanges: 2 starch, 1 vegetable, 1 lean meat, 1 fat; 1 1/2 Carbohydrate Servings.
Carbs are ok in moderation. I think that's what we all have to learn now. Moderation is the key to our long term success. Try having a bit of fresh fruit. Your body is probably starving for carbs. Fresh fruit has complex carbs that are good for you. So, maybe a bit of fresh fruit will help with the craving. I have half of an apple each morning. YUMM! And, fiber!!!
