Hey Terri, do you have any recipe for that beef jerky you make? I understand if you do it yourself it is alot better for you and you can control the sugar content etc. I was diabetic and all the packages I read it's way to high in sugar for me to try but I think maybe your way I could do...it would be a convenient to go snack! How long does a batch stay fresh? Thanks for the well wishes, right back at you!!! I'm sure you'll do great...we all are in our own ways.
I go through 3 pounds of jerky a month. So, I have no idea of how long it would last. I go through it too fast! I would assume it would keep as long as store bought jerky if kept in a sealed bag.
3 lbs of raw meat dehydrates into about a pound. That's why there is so much protein in an ounce. I usually have between 6-9 lbs of meat when I make a batch. That way I have enough to last a month or so. I usually get a round roast. I have the butcher trim all the fat off and slice it super thin. They will do that for free in most large grocery stores. Here's what I marinade it in overnight.
1 cup Worcestershire sauce
1 cup soy sauce
1 tablespoon honey (optional)
2 teaspoons ground black pepper
2 teaspoons onion powder
1 teaspoon liquid smoke
2 tablespoons habanero sauce (optional)
Then you dehydrate according to the directions on your dehydrator. Mine has a high setting so I can empty and refill the trays about every 4 hours. It usually takes all day to make a full batch.
