Ok - so my husband makes the BEST tasting stew in the world and all he does is throw stuff in the crock pot and let it all simmer all day. I swear whenever he makes it, it kickstarts my weight loss! It broke my last speedbump and today it broke my second speedbump lol. I was stuck at 231 ish for over a week and today I stuffed myself with this stew and lost 3 lbs! I absolutely love the stuff and it is all I ate today (4 servings). If you are curious I can tell you whats in it, but can only guess on the amounts since he never measures anything. Note: I am NOT a cook, my husband does all that but this is really yummy. 1 large pot roast meat - he got some thick roast not sure what kind 2 cans of stewed tomatoes 1 lg. can corn 1 lg. can green beans 1 can red beans 5? potatoes cubed up 1/2 a bunch of those long slender onions, chopped up 4? or so beef bullion cubes 1 cup of water poured over all that after it all goes in the crock pot. Anyway just wanted to share my mini plateau is busted once again! Kia -56 pounds

Sounds YUMMY! I wish I could eat it, but my doctor and dietician told me that after RNY I couldn't eat beef or pork for 6 month. *sigh* I'm going NUTS!! I'm a cheeseburger freak and am dying without beef. *sigh* Oh, well.... At least I have a good recipe for the end of August. LOL

Marion...I was told that we can eat ground beef as long as it is lean...maybe try substituting the roast with some lean ground beef? Just a thought!

Also if you cannot eat any beef, just eat the stew around the beef and save the meat for anyone else - or even a pet. The rest of the stew after a few hours gets a nice meaty flavor and the broth is to die for!

sounds wicked good. i've tried on several occasions to have some beef too. it just doesn't go down too well no matter how much i chew it. but the stew sounds really great. thanks dorthe
