Anyone got a yummy recipe that they want to share. I saw a post here before where someone had suggested that we swap recipes...and I think that is a great idea. Here is one that is easy and tasty..... Easy Feta Chicken Bake 6 boneless skinless chicken breast halves (about 2 lb.) 2 Tbsp. lemon juice, divided 1/4 tsp. salt 1/4 tsp. black pepper 1 pkg. (4 oz.) Crumbled Feta Cheese with Basil & Tomato 1/4 cup finely chopped red pepper 1/4 cup finely chopped fresh parsley PREHEAT oven to 350°F. Arrange chicken in 13x9-inch baking dish. DRIZZLE with 1 Tbsp. of the lemon juice. Season with salt and black pepper. Top with feta cheese; drizzle with remaining 1 Tbsp. lemon juice. BAKE 35 to 40 min. or until chicken is cooked through. Sprinkle with red pepper and parsley.

Easy Chicken Ingredients: 4 boneless, skinless, chicken breast 3-4 tsp. minced garlic 1 bottle Kraft Carb Free Italian Dressing Preparation: Clean chicken breast, cut 2-3 small slits in each chicken breast. Stuff the slits with garlic. Place chicken breast in a glass baking dish (9x13 inch), and pour the bottle of dressing over the chicken. Cover pan with plastic wrap and marinate in refrigerator for at least 4 hours. Bake at 350 degrees F for one hour or until chicken is cooked thoroughly. YUMMY.....

Baked Tilapia in Garlic and Olive Oil Ingredients: 4 fillets tilapia (4 ounce each) 4 cloves garlic, crushed 2 tablespoons olive oil (2 to 3 Tbls) 1 onion, chopped 1/4 teaspoon cayenne pepper Preparation: Rub the fish fillets with the crushed garlic, then place them in a shallow, non-reactive dish. Spoon the olive oil over the fish until they are coated. Place the onion on top of the fish. Cover the fish and refrigerate overnight to allow the fish to soak in the marinade. Preheat the oven to 350 degrees F (175 degrees C). If baking the fish, transfer it to a 9x13 inch baking dish along with the olive oil, garlic, and onion. Sprinkle the fish with the cayenne or white pepper. If you are grilling the fish, wrap the fish and oil, garlic, onion, and pepper in aluminum foil. Bake at 350 degrees F (175 degrees F) for 30 minutes. Notes: "Baked tilapia, marinated in garlic and olive oil. If you prefer to grill, get your grill hot and put the fish on aluminum foil; grill until desired doneness is reached. "

Hi Lori, I have enjoyed the last few days-Salmon Patties (which I didn't like before surgery, go figure) Just take a can of salmon (no bones or skin) and drain mix with salt, pepper, garlic, minced onions, and a little bit of egg white make about 2 patties and lightly dredge with bread crumbs put about 1 tbps of olive oli in bottom of non stick skillet and brown on both sides. This has been a very filling meal for me, as I can't even finish one patty! Huggs, Sharon 212/189/???

Hi ya Sharon..... Salmon was always one of my least favorite foods....as a matter of fact....it was right down there with liver! YUCK! But.....since our tastes do change (as you said), it might not hurt to try it again. Thanks for the recipe.....if I don't like it....my husband most definately will!
