Ezekiel Bread is an organic flourless, sprouted, seeded, grain bread. It was recommended to be by a nutritionist a number of years ago when I was referred to her because of high cholesterol. She was pulling me off of Atkins and easing me into a more carby low carb plan. Alas...it didn't work, but that's another story! The "Ezekiel" name comes from a bread "recipe" found in the bible in Ezekiel 4:9. Anyway, it's higher in protein than most other breads, it's very dense - so it's filling, and it's high in fiber (which I need!). I like it. It sits in my tummy now better than regular bread. I like their tortillas as well - better than regular whole wheat tortillas, but they really fill me up. I've never tried to make it myself, though there are recipes out there for it. I buy it in the organic freezer section at my grocery. You have to keep it refrigerated or frozen ****ep mine frozen because I only eat 1 slice per day at the most) because if you don't it'll begin growing sprouty things. I did that once, it's pretty funny. Like a little garden growing on a piece of bread. Margaret
