Hola! Got a couple of requests for this... ~*~ Jersey Mom's Bacon and Mushroom Quiche ~*~ Bacon: 6 strips, cooked Mushrooms: 6 medium-sized, chopped Onion: 1 cup, chopped (more or less depending on your taste for onions) Sharp Cheddar: 1 cup, shredded Milk: 1 cup (anything from skim to cream) Eggs: 5 large Salt: a dash Pepper: a dash Nutmeg: a few sprinkles Garlic powder (optional): a few sprinkles Pre-heat oven to 425º. Start with the crust (I use the Pillsbury piecrust that you just roll onto the plate. YUM!) or you can omit it out for a crust-free quiche. Use a pie plate or a casserole dish. A square dish is better for crust-free. Cook bacon and crumble into bottom of baking dish (or on top of piecrust). Break open eggs in a large bowl. Add all spices and beat eggs with a whisk. Add milk and whip again with a whisk. Add mushrooms and onions to the eggs. Pour egg mixture over bacon. Sprinkle cheese on top. Bake in the oven for 15 minutes. Reduce heat to 300º and bake another 30 minutes. Adjust to suit your oven. You can add or subtract any kind of fillings (especially vegetables) but don't overload the quiche. You want the egg and cheese to be the focus with the fillings just as an accompaniment. ~*~ENJOY~*~

I love quiche. I get WIC for M & N so we get 4 dz eggs and 4 pounds of cheese per month. I usually make spinach or ham and broccoli. I will try this. I just found a nitrate free bacon. YUM!

Trader Joe's has nitrate free bacon and other meats, hopefully there is one near you. For those of us questioning why we mention this - nitrates are a preservative that has been linked to stomach cancer. It is in processed lunch meats, bacon, etc...so watch labels for nitrate free food. LOVE QUICHE!! And agree that a square/rectangle pan is better for crustless. Blessings, Tiffany
