Healthy Muffin Recipes

These are some recipes made w/ healthy ingredients I got from the TX board. I make them and put them in the freezer and pull out 1 or 2 at a time to eat for breakfast. The best part is they help w/ the issue of being stopped up! move em out muffins 1 1/3 cup whole wheat flour (get it from the bins at wholefoods/sprouts etc if you don't have any) 3/4 cup oatmeal - thick cut or at least not instant if you can 1/6 cup sugar 1/6 cup splenda (I just grab a 1/3 cup and pour splenda in then top with sugar) 1/3 cup wheat germ (another one of those top of the ceral isile things) 4 t baking powder about 2 T apple pie spice or cin, nutmeg and ginger mix together than add to this dry mix 1/2 cup pecans/walnuts 1 cup raisins (break them up and stir them in) 2 apples with skin fine chopped or grated (mixin well to coat also) in second bowl mix 2 eggs 3/4 cup milk 1 container of baby food prunes (you can you apple sauce if that is all you have) mix well - make a well in the middle of the "dry" bowl and pour in the wet bowl - stir till JUST mixed - do not over stir -do not let helpful 5yo stir oven at 400 degrees - spray with "pam" 20 muffin tins or line with cupcake papers and spray those - these WILL stick there is NO fat in them use ice cream scoop to fill muffin tins no more than 2/3 of the way full bake 18-21 mins till done they may not rise a whole lot but they taste really good and have TONS of fiber in them to move things right a long Pumpkin Muffins preheat over to 350 degrees spray 24 muffin tins with "pam" mix in med bowl 1 can solid pumpkin - plain nothing added 3 eggs 3/4 cup spenda 1/4 cup sugar 1/2 cup apples sauce 1baby food prunes (this is the 2 oz jars or box, aprox 1/4 cup) 1/4 cup skim milk in second bigger bowl mix 1 3/4 cup whole wheat flour (if you buy a bag store in freezer it will go rancid if on the shelf to long) 1/2 cup wheat germ (top shelf by hot ceral most of the time) 2 t baking soda 1t baking powder 1/2 t salt 2 T pumpkin pie spice OR mix of 1 1/4 T cin, 1/2 t nutmeg 1/2 cloves 1 cup nuts (I prefer pecans but walnuts or slivered almonds would work also) 1 cup rasins add wet mix to dry mix - mix together till barely mixed DO NOT OVER MIX it should have lumps divide into greased muffin pans - about 1/2 to 2/3s full bake 20-25 mins till done Karla
