Great recipe!
Yesterday I went shopping and purchased a weigh****chers cookbook. Mainly because it gaveyou exact information on the nutritional value to all the food. Good idea for the weight concious. I am not a cook but I am vowing to start cooking more healthy meals for the family and hopefull cutting out some of the bad eating habits we have all learned. My husband and family loved this recipe and so did I so I think I will try to write weekly recipe posts after the guinea pigs give me their input. Here is what we had yesterday.......
Grapefruit Chicken:
ingredients:
2 grapefruit (use one pink and one white for contrast though is not neccessary)
4 skinless boneless chicken breasts
1 table spoon of chopped thyme
1/2 teaspoon salt
1 tablespoon apple jelly
1 teaspoon butter
mint sprigs to garnish but not necessary!
Peel and section grapefruit, reserving 1/2 cup of grapefruit juice (squeezed from the sections...) set aside
spray nontick pan with non stick spray and set over medium heat, sprinkle both side of checken with thyme and salt, cook chicken until golden brown and then remove and place on platter
add the reserved grapefruit juice, apple jelly, butter to the skillet. Bring to a boil. Cook, stirring constantly, until the sauce thickens slightly, about 2 mintes, spoon sauce over and grapefruit sections over chicken and serve......This was scrumptious....
