This year we have extra turkey leftover so I did a search for turkey day leftovers and I found 2 soups that sound yummy! I love soup because it's easy and I'm always cold! If you have ANY turkey leftover recipes... Come share!!! I need ideas! This is what I found.................... Leftover Turkey Soup.. 1/2 cup chopped onion 1 medium carrot, sliced 1 stalk celery, sliced 1 Tbsp. oil 2 cans (14-1/2 oz. each) chicken broth 2 cups water 1 env. GOOD SEASONS Italian Salad Dressing & Recipe Mix 2 cups cubed cooked turkey 1/2 cup bite-sized pasta, uncooked COOK onion, carrot and celery in hot oil in large saucepan 3 to 5 minutes or until crisp-tender, stirring occasionally. STIR in chicken broth, water and dressing mix. Bring to boil. ADD turkey and pasta; cover. Reduce heat to medium-low; simmer 10 to 12 minutes or until pasta is tender. Calories 170 Total fat 6g Saturated fat 1.5g Cholesterol 35mg Sodium 910mg Carbohydrate 10g Dietary fiber 1g Sugars 3g Protein 18g ________________________________________________ Creamy Corn and Turkey Soup 1/2 cup chopped onion 1 cup chopped red pepper, divided 2 Tbsp. butter or margarine 4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed 1 can (14.75 oz.) cream-style corn 2 cups chicken broth 3/4 cup milk 2 cups shredded leftover cooked turkey COOK onion and half of the red pepper in butter in large saucepan on medium heat until tender, stirring frequently. Reduce heat to low. ADD cream cheese; coo****il melted, stirring constantly. Add corn, broth, milk and turkey; mix well. COO****il soup is heated through, stirring occasionally. Serve topped with remaining chopped red pepper. Great Substitute Prepare as directed, using PHILADELPHIA Neufchatel Cheese, 1/3 Less Fat than Cream Cheese. Special Extra For more robust flavor, roast and peel the red peppers before chopping; add to the soup along with the turkey. Or, use drained, jarred roasted red peppers instead. Calories 270 Total fat 14g Saturated fat 7g Cholesterol 70mg Sodium 600mg Carbohydrate 18g Dietary fiber 2g Sugars 10g Protein 19g *I'm gonna try LF cream cheese to lower the fat a little. Leftover turkey surely is great for soups! We used to make turkey sandwiches also from our leftover turkey. A little bit of turkey w/ LF mayo and cheese on some wheat bread would be great! I might make that tomorrow.....
