Turkey Day
Hello Everyone,
Thanksgiving is fast approaching and I was wondering what are people going to eat and feelings toward it. Do any of you have special recipies you want to share? Im a little nervous that I will over do it or be kind of sad that I cant eat all my faves. Also I hate when people ask me questions about what I can and cannot eat (I know they are trying to be nice). A friend of mine gave me a great recipie for carrot cake that is sugar free and if you like carrot cake you gotta try this out:
Carrot cake
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 1/2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
4 large eggs
1 cup canola oil
1 cup SPLENDA
2 3/4 cups shredded carrots
1 (8 ounce) can crushed pineapple, well drained
1 cup flaked coconut
1/2 - 3/4 cup chopped walnuts
PREHEAT oven to 325 degrees F.
Spray 2 - 8" round pans with cooking spray and dust bottom and sides with flour.
Combine flour, baking powder, baking soda, salt, cinnamon and nutmeg in a bowl. Set aside.
Beat eggs, canola oil and splenda with a mixer until batter is smooth. Add flour mixture beating at low speed until blended. Fold in carrots, pineapple, walnuts and coconut. Pour batter into prepared cake pans.
BAKE for 35 to 40 minutes, or until a toothpick inserted in center comes out clean. Cool in pans on a wire rack 10 minutes. Remove from pans, and let cool completely.
Sugar Free Cream Cheese Icing...
1 1/2 cups low fat or fat free cream cheese, room temperature
1 1/2 tablespoon butter, softened
16 packets splenda
2 teaspoons vanilla
0-2 tablespooons milk (if needed)
Blend cream cheese and butter, add splenda and vanilla. Thin frosting with milk if desired.

At first I was dreading Thanksgiving because I knew I was going to be able to pig out like I usually do. Now I'm fine with it. I can't be afraid of food. I have to learn to live a normal life. My surgeon and nut are all about moderation so that's what I'm trying to learn. I'm gonna do more proteins but I at least have to taste everything else. The things I'm doing different is not cooking as much, no mashed potatoe's and I'm making that carrot cake instead of the real deal. I found the recipe on splenda.com a couple weeks ago and got everything for it today. Oh, I'm also using splenda in my sweet potatoe's instead of regular sugar.

Laurie, I'm with Kay. I'm eating!!! I'm gonna eat all my favorites, and I'm getting up more than once. Moderation is key. A spoonful of this, a spoonful of that...it'll do some good. I did NOT have this surgery to be scared of food all my life and to deprive myself. I had this surgery to live a more normal life, and I'm happy that way. I won't be sad over Thanksgiving because of food. I'm gonna enjoy myself. If I blow this surgery over a Thanksgiving meal, then something's seriously wrong and it has nothing to do with my willpower! Whatever one choses...be good to yourself over the holidays.

I'm hosting the family Thanksgiving dinner so I have some control over most of the food. I plan on fixing a crustless SF pumpkin pie and having a small bite of all of my favorites. I love turkey so I know I'll have no trouble getting in my protein.
I also got the Egg Nog SF Da Vinci syrup to fix my morning protein shake with so I really feel like it's the holidays. The egg nog in the stores has been calling my name and this takes care of the craving.
I also plan on taking a long walk after all of the cooking.
My mom is in town for the holiday and this afternoon my sister and I are taking her over to the Opryland Hotel to see the ice display and the lights.
