Low Carb King Ranch Chicken
Here's my recipe for Low Carb King Ranch Chicken
King Ranch is a huge (millions of acres) ranch in South Texas. THis recipe has been around for a while in Texas. You can also make a version w/ tortilla chips and hamburger meat for variety.
Low Carb King Ranch:
I use Buena Vida Whole Wheat tortillas from Walmart - they are 70 calories and only 7 g carbs per tortilla. They are in the Cheese section w/ tortillas you have to cook at our Walmart in Livingston. They are better to me than the ones on the bread aisle.
I boiled 4 chicken breasts and diced them up, heated up some low sodium chicken broth (about 1 c) in a bowl, dipped 6 tortillas in it and then cut them up (just to make them easier for me to eat) and put a layer of tortillas, then sprinkled the cut up chicken over the tortillas. Mix 1 can Healthy Request Cr. of Mushroom Soup, 1 can Rotel Tomatoes, and 1 1/2 tsp. Chili Powder, a little black pepper and 1 tsp. kosher salt. I put this mixture (all but maybe 3/4 c over the chicken, then added grated 2 % Mexican Cheese (from Walmart) and a couple sliced MJ w/ jalapenos on top, then put on a little more cut up tortillas (from the original 6), the other 3/4 c sauce, and then sprinkled a little more cheese on top. Bake at 375 for 30 minutes. It is good!

The recipe I had called for Ranch style beans and Ground beef... but yes it is YUM-O!!!
I had forgotten about it and never really tried to convert it to LC, but now I think I can...
