2 GREAT tilapia recipies
#1TILAPIA W/TOMATO RELISH (4-12SRVGS depending on how many oz you serve)
4-6oz fillets of tilapia
2T olive oil
1T lemon juice
1/2t salt
1/4t pepper
1 large seeded/chopped tomato
1/3C pimento stuffed olives, chopped
2T fresh basil
1T capers, drained/chopped
Preheat oven to 450
Tear 4 sheets of foil-place 6oz of tilapia on one side of the foil, brush with a mix of 1T oil, salt and pepper. Then fold the other half of the foil over and seal around the edges forming a packet-Bake for 6-10 minutes depending on the thickness of the fillets.
Combine the rest of the ingredients to make the relish-serve 1-6oz fillet with 1/3C relish.

obviously the numbers above would be dfferent if you dont eat the full 6oz-I had a 3 oz portion with 1T of the relish and it was perfect!
PAN SEARED TILAPIA W/LEMON, CHIVES AND CAPERS
4 SERVINGS
4-6OZ fillets
dredge in flour and pepper and pan fry on medium high heat for 7-8 minutes each side depending on the thickness of the fillet.
To make the sauce:
Combine 1/3 C lemon juice
1T fresh chives
1t capers
1/4t salt
2T olive oil
Serve 1-6oz fillet with 2T sauce
