Mary's wonderful recipe
I tried Mary's chicken enchilada insides recipe tonight. It was absolutely wonderful. I made a triple batch and actually put up 3 plastic containers and then ate some tonight for supper. The only thing I did different was I added a little LF sour cream. Mary, you have a hit there with your recipe. I hope I did it right, because I put in both kinds of soup. It said cr. of chicken & mushroom. Was that right?

Here's the recipe:

Recipe:
Combine in bowl the following, microwave for 2-3 min.
3 oz canned chicken breast
1 oz reduced fat cheddar jack cheese, shredded
3-4 diced jalapeno slices
2 Tbs. cream of chicken & mushroom soup, undiluted
Salt to taste
= 27g protein
I added a couple of Tbsp. of LF Sour Cream. I think I accidently doubled the soup. Oops. I thought she meant 2 Tbsp. of each type of soup. I didn't have any cheddar jack so I used LF cheddar and a little bit of Velveeta. I also boiled some chicken breast meat instead of canned chicken. It's a good one!
