Mom's Protein Pancakes (crepe like) 6 eggs 1c cottage cheese 1c flour 1/3 c sugar or Splenda 1t vanilla 1/2 c skim milk 1/3 c vegetable oil Put into blender - eggs first, then other liquids, add flour & sugar, blend well. Pour or ladle onto non stick pan or griddle over medium heat (with eggs & sugar they can burn easily). Coo****il golden brown. Serving size = 3 pancakes (3-1/2 - 4 inch) (est. food value - 12 g protein, 200 calories - calculated using Spenda) You can change the quantity of flour and oil, but it does affect the consistency, cooking and taste some.
