Hi, Well tomorrow is my birthday and my family wants to make me a birthday cake. I said no but they said I could have maybe just one bite and blow out the candles. I was thinking maybe there is another low cal. desert I could make so everyone will be happy. Does anyone have any low cal/ fat free deserts that I could make for tomorrow. Any ideas or recipes I would appreciate. Thank you.... Mimi Bedell

Hi Mimi! Happy birthday! Mine is the 28th and I must admit, they got me a cake at work this week and I did have it! And I enjoyed it, all three or four nibbles of it, lol. Have a great b-day, I hope that you find a great alternative!!! Jenny

I have used the Krustec and Atkins low carb bake mix (and their recipies) to make cupcakes and what I do is make them in cupcake liners, then when they are cooled I cut and "x" into the top of each one and pour in about 1-2 TB of SF jello (unset) into each one and then I stick all of the cupcakes in the fridge to "set up" for about 2 hours. Then I taken them out and make "splenda frosting" and frost the cupcakes and serve them as individual birthday cakes. Made these for my son's class last year and they LOVED them so much! Low in sugar, calories and carbs! All the recipes I got off the net (the cupcakes using the mixes) and the Splenda frosting. HTH! Jamie

No Crust Strawberry Pie Serves 8 Ingredients 3 cups fresh strawberries 1 (2.1 ounce) package sugar-free cook and serve vanilla pudding mix 1 (.6 ounce) package sugar-free strawberry flavored gelatin 2 cups water Rinse and hull strawberries. Distribute evenly in a 10-inch pie pan. In a medium saucepan combine pudding mix, gelatin mix, and water. Stir well and bring to a full boil. Pour mixture over strawberries and refrigerate for 4 to 6 hours. Top with light or low fat frozen whipped topping prior to serving, if desired. Nutrition information per serving: Calories 58, Fat 0.3g, Cholesterol 0mg, Fiber 2g, Sodium 187mg, Protein 1.7g.

There is a great cake recipe on the splenda baking bag. I make sugar free frosting with 8oz cream cheese 1 pkg. sugar free pudding 1/2 cup fat free half and half 1 teaspoon vanilla and 2pkgs. knox gelatin in 1 cup of water boil the water and sprinkle in the knox gelatin while it cools (not cool enough to gel) soften and beat the cream cheese beat in the pudding mix dry slowly whip in the half and half slowly beat in the knox gelatin refrigerate for 30 minutes then frost the cake. You can use different pudding flavors I like the chees cake, white chocolate and vanilla best. It's sugar free and has a significant amount of protien. Sandra
