Favorite Meal?

Do you have a safe, favorite meal that goes down easy and STAYS down? My favorite meal is meatloaf with mashed potatos and gravy. The meatloaf has to be freshly cooked, if I try to eat the meatloaf the next day I Syndi

I like two. One is portabella mushroom caps with low fat cheese and italian seasonings. I can eat 2/3 of one at a time. I like to dip them in an artichoke, parmesan, low fat, mayo, garlic sauce. I also like roasted chicken from HEB (minus the skin) and mashed cauliflower (looks and tastes sorta like mashed potatoes but no carbs!) Dessert is marscapone cheese with cocoa powder, vanilla, a dash of cinnamon, and sweet and low. Decadent! Tastes like chocolate fudge. Very rich. I can eat only one tablespon at a time. At restaurants, I like Chinese Hot and sour soup with tofu. I tell them to leave out the veggies.

I made some homemade beef stew. I did really well with it and it was delicious! I made a big pot, so it lasted over a week! I made the beef in tiny bite size pieces, and eat that first. And then the veggies! ~Kim

1) Meatballs with spaghetti sauce. I like the turkey meatballs or beef meatballs. I fix spaghetti for my family and just eat the meatballs. It is hard not to eat the pasta (I used to only want the pasta!), but I am adjusting to that. WHen I was on a soft diet, I bought the spaghetti sauce that had tiny meatballs in it, and thought I was in heaven. I can't stand them now, though and just either buy turkey meatballs and add the sauce or make meatballs out of ground beef. 2) I also like the Perdue chicken cuts. They come in different flavors and are delicious. They are so easy to prepare quickly and last for about 4 meals. I can eat them cold with some lettuce or hot just by themselves. I started off having to moisten the chicken with Carb Countdown milk, because I had trouble with it being too dry. Don't have to do that now though. I also have trouble with reheated leftovers, and sometimes have to have to add more moisture with low-fat gravy, broth or milk in order to eat leftovers. Sue R.

I have only tried lettuce in the past few days, and only eat about 2 or three bites, but it has been no problem. I am too afraid to try any other raw veggies, though I was given the go ahead on Tuesday to try some. Sue R.

Syndi, I have been eating veggies! I learned that you can eat lettuce without any problems but I have take it slow with veggies with thick skins. Also, don't forget the V8 juice.

Does it have to be a meal? Cuz right now my Carb Smart chocolate ice cream is my best friend! LOL! About every other day I eat about 1/2 c to curb the chocolate cravings. I used to LOVE to eat chocolate everyday! I am actually still experimenting with everything so I really don't have a favorite yet. I made scallops for the first time yesterday and that was TASTY just too chewy for me, I hate eating food that I have to masticate on all day before I can swallow it! Syndi, I made chili this past weekend with ground turkey "BREAST" (white meat only so no after taste), and Bush's brand chili magic canned chili starter. It was so good and my husband even ate it ! And I made a soft taco with ground chicken and chicken taco seasoning mix, petite tomatoes, FF shredded cheese, and a dollop of low fat sour cream. Of course I could only eat 1/2 but mmmmmmmmm. Got some great ideas from here, good question Syndi....
