Mini Deep Dish Pizza Recipe
Made this last night and it was a pretty good way to get a pizza fix.....plus each serving has 11 grams of protein!
1 egg, beaten
1/2 c. low-fat riccotta cheese
2 tbsp. grated parmesan cheese
1/2 tsp. italian seasoning
pizza sauce
1/4 c. shredded mozzerella cheese
Combine first 4 ingredients and spoon into 3 small ramekins that have been sprayed with nonstick cooking spray. Bake at 350 degrees for 12 minutes. Remove from oven and top each with pizza sauce and cheese. Return to oven and bake for 10 minutes or until cheese is melted.
Mine was a little dry, so all I did was add more sauce to it and it was much easier to eat. Enjoy!
