Syndi, Mine's really simple, because I DESPISE cooking. I take boneless, skinless chicken tender (I buy the bag of individually frozen ones an pull out one at a time - you can thaw them or cook them from frozen), I mix I tsp pre-packaged pesto mix (dry) & 1/2 scoop tastless protein powder (if you have it) in a ziplock baggy. Place damp chicken in bag and shake. Throw it on a preheated George Foreman grill & coo****il done (3 min per side if thawed, 6 if frozen). With this, I eat some applesauce sweetened with Splenda & sprinkle in some protein powder. Amanda

Hey Amanda... I applaude the use of tasteless protein powder... however did you know that heat denatures protein. So if you put the powder on your chicken BEFORE you cook it, it is NOT worth the same amount of protein (if any) afterwards. Add the powder to a sauce or sprinkle the chicken after cooking and you will reap more protein power! HTH! Brightest Blessings for a Wonderful Day~ Jamie M. I have a couple...They all involve cottage cheese /or refried beans (cause I'm only 6 weeks post op). I went through a Lasagna phase. 2-3 ounces cotton cheese (I love Kroger's large curd), covered with 1/4 cup of Prego traditional sauce, and 1 ounce reduced fat shredded cheddar - nuke until the cheese melts. Yummy! I have changed that lately to 2-3 ounces cottage cheese with Tostitos medium salsa on top. It gives me some crunchy vegs, plus, I am just about dying for some fresh veggies. I also like cottage cheese with capers on them. The other is fat free refried beans. I take a packet of Ortega Taco seasoning mix (Smokey Chipotle flavor) and mix it with about 3/4 cup of boiling water, and let it sit, until everything is well mixed and softened. Add that to some refried beans, until thinned down to my consistency, and then top with shredded lowfat cheddar, nuke it, and add some tiny dollops of sour cream. I take about three Tostito's Light Tortilla Chips and break them into much smaller pieces and use those to dip with. Actually, I just use my fork, to place some beans on the chip piece. Chew well and Voila'. Enjoy! Junith

Well I have invented all sorts of dishes that I have posted here and there... guess maybe I should put them on my website! LOL! Anyways, tonight I had a serving of EAT SMART soy chips with 4 TB of hummus and 3 black olives. THAT WAS SO YUMMY! If I am feeling "snacky" like during a movie I take a serving of EAT SMART CheddAirs and sprinkle them with a parmasean cheese and flavorless protein powder mixture and snack on them during the movie. I made a Tagalong (Girl Scout Cookie) flavored protein shake the other day. ELITE chocolate protein powder mixed with 5 oz. of lactaid 2%, 6 ice cubes, 1 serving of CARB SMART chocolate ice cream and 2 TB of Jiff Lite peanut butter. YUM! Pizza- MISSION Low Carb soft tortilla pan fried til crispy. Then lightly spray with olive oil, put 1TB of pizza sauce on, 1/4 flavorless protein powder, 1/4 Low Fat pizza cheese and any other toppings I want that I can have at the time. Place in toaster oven until melted and enjoy! I can eat half of one of these right now. Mexicali Shrimp- lightly brown and crisp 1 MISSION low carb tortilla on one side while you are preparing the following. In a small frying pan fry up 1 serving of precooked shrimp cut into small pieces. Sprinkle with Adobo & Sazon. Add 2 TB fresh salsa and a packet of Splenda. When combined and warm, flip the tortilla to other side and pour over the tortilla, sprinkle 1/4 LF mexican cheese and allow it all to melt together. Take off the heat and plate the tortilla (kind of like a pizza), spread LF sour cream and homemade guacomole over the top. Cut into four sections with a sharp knife and enjoy. You can also mix flavorless protein powder in with the sour cream. This is REALLY high in protein! HTH! Jamie PS- I have also invested in Filo dough and it works nice in thin layers, to BAKE all sorts of great little creations such as calzones. Anyways, it bakes up nice and crisp without being "doughy" as long as you use very thin layers! I love spinach pie!!! Take spinach and blend it in a food processor so it is a smaller consitancy that you would normally have in spinach pie (greek) and use LF-High protein feta (I actually found some!)

This is a good post because I'm getting bored with the soft foods I've been eating and need new ideas. This is what I've been eating for breakfast for the past week and am not tired of it yet: ALMOST RICE PUDDING 3 eggs, beaten 1 c. cottage cheese 3/4 c. skim milk 1/2 c. splenda 1 tsp. vanilla Combine all ingredients and pour into 6 small ramekins. Sprinkle ground nutmeg on top of each. Place ramekins in a 9x13 pan and fill with 1 inch of ho****er. Bake at 350 for 45-50 minutes. Mary Ellen
