Lunch Ideas?

Hi All, I'm just over 2 months out and I'm needing ideas for lunch. I work at home, but I don't want to spend a lot of time cooking lunch and since I'm not "out" stopping at Wendy's for chili or something like that is out. Perhaps you would share with me some of your lunch ideas. Gloria

I keep cottage cheese, string cheese, turkey pepperoni, chicken, soup, refried beans, salsa and soup at work so I don't have to go out. I also usually have an Atkins RTD shake with me at work for either snack or lunch or when I'm just "starving". Gloria, I try to have a variety, so I don't get bored. I mix tuna with cottage cheese or ham with cottage cheese. I have even mixed bacon bits with cottage cheese (I use low fat cottage cheese). You could try a scrambled egg with cheese or cheese and bacon or ham. When scrambling I whip with skim milk instead of water. Water actually makes them flufflier, but I use the milk for the added protien. Hope these suggestions help! Kimberley 248/236/180.5

HI Gloria, A really great choice is the "tuna of the Sea" lunhc packs. They do not even have to be in the fridge. They are small enough to not be wasteful, you probably can not eat all of it. They are also really inexpensive, only around $1.25. Try them and see if you like them. Best of luck and God Bless Kristal V.

Hi Gloria, I like to eat salads, turkey slices, cheese and whole wheat crackers, tuna or chicken salad in a can, leftovers, refried beans and cheese, fruit salad, cottage cheese, or a breast of chicken. I'm single and live alone, so eating at all is a chore for me. I like to get a pound of sliced beef/pork from Sonny's Bar-B-Q and pull out a few slices for different meals. It freezes well and always tastes great! Anything like that will freeze and be ready in a microwaved minute... Hope this helps! Barbie 1-21-04 281/230/150ish

I have been making quesadillas for lunch for me and my husband. I use a whole wheat tortilla, spoon on a little Chi Chi sausa(mild), use the canned chicken breast (drained, about 1 oz. I have problems with chicken at times but have never had any problem with the canned chicken, is very soft) and sprinkle about an ounce of cheese (usually mozzarella) on it, fold it in half and grill in the skillet until the cheese melts and is lightly browned on outside. Tastes great and very filling. My husband loves them. The quesadilla from Taco Bell are okay, this is better and made the way I like it. At other times I eat about 3/4 cup of l/f cottage cheese only. At other times I eat half of a turkey bacon wrap from Subway, very tasty too. I try to eat a variety of things to keep from getting bored with the same stuff all the time. I also at times will get a baked potato from Wendy's and have low fat sour cream with it. Just a few suggestions. Good luck finding something good for lunch!!!
