There are many ways to eat the colorful stalks and leaves. Keep in mind that less cooking time equals more nutrients. Some people enjoy eating the greens mixed into a salad, while others love to steam them for a few minutes. I tend to cut most of the stalk away and cut the leafy greens in to strips, sauté them in olive oil and garlic for about five minutes, and then serve them with a little salt and pepper, apple cider vinegar, and a small amount of butter.
