Thanksgiving Leftover Turkey Salad Recipe
November 25, 2022As much as I love Thanksgiving day and all of the festivities, I have come to realize that the day after Thanksgiving isn’t so bad either. Of course, I love spending time with family and friends, so Thanksgiving day wins out. But I have to tell you, to me, the food always tastes even better the next day! And there are always plenty of leftovers to make this delicious Thanksgiving Leftover Turkey Salad Recipe!
I just love this recipe by best-selling cookbook author Holly Clegg and I cannot wait to try it. I love all of the ingredients to put this recipe together and what a delicious way to use leftover turkey and rice. This holiday recipe is shared from Holly’s Too Hot in the Kitchen cookbook. Now, our family has never included a wild rice dish on Thanksgiving day but this year, I am going to put it on the menu!

Thanksgiving Leftover Turkey Salad

Makes 10 servings
Ingredients
- 2 tablespoons lime juice
- 2 tablespoons roasted garlic seasoned rice vinegar
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1/2 teaspoon ground ginger
- 4 cups cooked wild or brown rice
- 2 cups chopped boneless skinless cooked turkey (or chicken breasts, rotisserie chicken)
- 1 ounce cup dried apricots strips about 6 package
- 1/2 cup dried cranberries or mixed berries
- 1 cup chopped green onions
- 1/3 cup sliced almonds toasted
Directions
- In small bowl, whisk together rice vinegar, lime juice, oil, honey and ginger; set aside.
- In large bowl, combine remaining ingredients except almonds. Combine with dressing and refrigerate. When serving, toss with almonds.
