Simple Easy-To-Make Salmon with Spinach Feta Stuffing Recipe, 42g of Protein!
July 19, 2017This Salmon with Spinach Feta Stuffing is heart healthy, WLS-friendly and can make a quick romantic dinner or a make-ahead nightly meal for busy nights. This is one of those dishes that looks difficult to make but it isn't!
This simple salmon recipe is a great option to include more salmon for a healthy diet and one of my favorite baked salmon recipes. If you have never had salmon, this easy salmon recipe will introduce you to salmon with a splash. I like to stuff the salmon ahead of time and refrigerate until I'm ready to cook.
Salmon with Spinach Feta Stuffing Recipe
Makes 4 servings
Prep Time: 5 minutes; Cook Time: 20-30 minutes; Total Time: 25-35 minutes
Ingredients
- 2 ounces reduced-fat cream cheese
- 1/2 cup crumbled reduced-fat feta cheese
- 1/3 cup chopped red onion
- 1/2 cup chopped baby spinach
- 4 (6-ounce) salmon fillets
Directions
- Preheat oven 350°F. Coat baking dish with nonstick cooking spray.
- In a bowl, combine cream cheese and feta with a fork, mixing until blended. Add onion and spinach, combining well.
- Split each piece of salmon in half lengthwise without cutting all the way through (make a pocket). Divide filling in each fillet spreading to cover. Place top salmon piece back over filling and on prepared baking dish. Bake 20 minutes or until flaky and done.
