Ingredients
- 1/2 cup oat flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon cinnamon
- 1/2 large egg
- 1/2 cup Premier Protein® Pumpkin Spice flavored protein shake
- 1/8 cup pumpkin puree
- 1/2 teaspoon vanilla extract
- 1/2 tablespoon of sugar-free maple syrup
- Pinch of salt
- Cooking spray for the pan
Directions
- Mix Dry Ingredients: In a large bowl, whisk together the oat flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
- Combine Wet Ingredients: In another bowl, beat the egg and mix in the Premier Protein® Pumpkin Spice flavored protein shake, pumpkin puree, sugar-free maple syrup, and vanilla extract.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Preheat Pan: Preheat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or butter.
- Cook Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown and cooked through.
