Pan-Seared Halibut with Lemon-Herb Mayonnaise

Serving Size: 1 filet of halibut with 1 tablespoon mayonnaise

Ingredients

  • 1/4 cup fat-free mayonnaise
  • zest and juice of 1/2 a lemon
  • 2 teaspoons finely chopped tarragon
  • 2 teaspoons finely chopped shallots
  • 4 halibut filets, about 6 ounces each
  • salt to taste
  • freshly ground black pepper
  • 1 tablespoon vegetable oil

Directions

  1. In a small bowl, combine the mayonnaise, lemon zest, lemon juice, tarragon and shallots. (This can be made in advance and stored in the refrigerator.)
  2. Season the halibut filets with salt and pepper.
  3. In a large nonstick skillet, heat the oil over medium-high heat. Add the halibut filets and sear the filets for 4 to 6 minutes per side, depending on the thickness of the filets. (Thinner filets will take less time, while thicker filets will need more cooking time.)
  4. Serve each filet with a dollop of lemon-herb mayonnaise.
