No-Bake Coconut Cranberry Protein Bars

Ingredients

  • 1 mashed banana (about 1/2 cup)
  • 2 tablespoons non-fat Greek yogurt (plain, vanilla, or coconut flavored)
  • 2 tablespoons almond butter
  • 1 teaspoon vanilla extract
  • Optional: 1 teaspoon honey
  • 1/2 cup dried cranberries
  • 1/2 cup shredded coconut (unsweetened)
  • 1/2 cup chopped nuts (like walnuts, cashews, pecans, or almonds)
  • 2 cups rolled oats
  • 1 cup protein powder of your choice (I use coconut whey protein powder)
  • 1 tablespoon chia seeds
  • Pinch of salt

Directions

  1. In a large mixing bowl, mash the banana. Add the Greek yogurt, almond butter, vanilla extract, and honey (if desired) and mix well.
  2. Add the dried cranberries, shredded coconut, and chopped nuts. Mix until well combined.
  3. Gradually fold in the oats, protein powder, chia seeds, and salt. Mix until a dough forms.
  4. Press the dough into a lined 8×8 inch baking dish.
  5. Refrigerate for at least 30 minutes to set. Cut into 12 bars and enjoy! Store the bars in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
