Israeli Chopped Salad Recipe – a Refreshing & Easy Side Dish!
August 21, 2020Israeli Chopped Salad is a classic side dish that is easy-to-make. You can have a colorful salad prepared in just 10 minutes! This recipe is a great way to utilize all of those fresh vegetables from your garden or local farmer's market. There are so many variations that you can make. Some optional add-in ideas are feta, chickpeas, or bell peppers. To make it even heartier, you could add couscous or barley.
Israeli Chopped Salad is nutritious, refreshing, and best eaten within 1 to 2 days. We love the crunch of the fresh veggies with the bright lemon dressing! It is great served with grilled chicken, steak, or fish.
Israeli Chopped Salad Recipe

Makes 8 Servings
Total Time: 10 minutes
Ingredients
- 1 lb Persian cucumbers, diced
- 1 lb cherry tomatoes, chopped
- 1/2 cup red onion, diced
- 1/2 cup parsley, chopped
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh dill, chopped
- 3 tbsp fresh lemon juice
- 2 tbsp olive oil
- Salt and pepper
Israeli Chopped Salad Directions
- In a large bowl, toss together your cucumbers, tomatoes, red onion, parsley, mint, and dill.
- Stir together the lemon juice and olive oil. Toss with the vegetables and season liberally with salt and pepper.
- Refrigerate the Israeli Chopped Salad until ready to serve, enjoy!
