Graham Elliot’s Grilled Salmon With Napa Cabbage Slaw

Graham made the decision to have weight loss surgery in order to regain his health for himself and his family. With the support of his family and his friend and surgeon, Dr. Vivek Prachand, Graham had the Vertical Sleeve Gastrectomy (VSG) in July 2013 at the University of Chicago Medical Center and has lost 150 pounds since his surgery.
As a critically acclaimed chef, a restaurant owner, and a judge on Fox's show MasterChef, Graham is absolutely passionate about cooking good food. Today, Chef Graham Elliot, shares one of his personal favorite VSG friendly recipes with the ObesityHelp community!
Grilled Salmon With Napa Cabbage Slaw And Whole Grain Mustard Vinaigrette
Ingredients
4 x Salmon Fillets (6 ounces each)
1 x Whole Head Napa Cabbage
1 x Red Onion
1 x Green Apple
2 x tablespoon Extra Virgin Olive Oil
1 x Lemon
1 x tablespoon Whole Grain Mustard
1 x teaspoon Apple Cider Vinegar
Salt & Pepper to taste
1 x quart Ice Water
1 x bunch of Chives (chopped finely)
For the Salmon
*Season salmon fillets on both sides with salt and pepper.
*Using a medium-high heat grill pan, grill salmon in 1 tablespoon of olive oil for roughly 3-4 minutes on both sides.
For the Salad
*Using a mandolin, shave the napa cabbage as thin as possible. Set aside.
*Using a mandolin, shave red onion and set aside.
*Julienne the green apple and place in ice water.
*Toss the cabbage, apple and red onion together and mix with olive oil and lemon, just enough to coat.
*In a separate bowl, mix remaining olive oil (1 tablespoon), apple cider vinegar and whole grain mustard together and set aside.
To Finish
*Place slaw in center of plate.
*Lay salmon filet on top of slaw.
*Garnish salmon with chopped chives.
*Drizzle whole grain mustard vinaigrette on and around the plate.
*Serve and watch your guests faces light up 🙂
