Soup is a soothing way to calm hunger and to get a good dose of nutrition. Ginger, carrots, and cauliflower contain healing compounds like gingerol that works as an anti-nausea, and vitamin A and C that both are important for collagen production.
Serves 4
2 tablespoons olive oil
1 large white onion, peeled, chopped
3 cloves garlic, chopped
1 4-inch piece of ginger, peeled, chopped
½ teaspoon freshly grated nutmeg, plus more for garnish
¾ pound carrots (about 6 large carrots), peeled, chopped
½ head cauliflower, chopped
32 ounces low-sodium chicken broth
1/2 cup water
1/2 cup grated Parmesan
Heat the olive oil in a large stockpot over medium. Add the onion, garlic, ginger, and nutmeg. Cook 3 to 4 minutes until the onions start to soften. Add the carrots, cauliflower chicken broth, water and turmeric. Bring to a simmer; cook 15 minutes until the carrots and cauliflower are tender. Add the water.
Blend the soup using an immersion blender or food processor. Transfer to bowls and garnish with 2 tablespoons each of the Parmesan and extra nutmeg if desired. Serve immediately.
