Eggplant Pizza Bites
These pizza bites are the perfect low-carb way to enjoy pizza. With a roasted eggplant crust, marinara sauce, mozzarella cheese, and any topping you like - these veggie pizzas won't disappoint.

Makes 6 Servings
Ingredients
- Mini turkey or regular pepperoni
- Sliced bell peppers
- Shredded zucchini - I like to cook it first, so it doesn't get soggy
- Chicken or turkey sausage
- Mushrooms
- Onions
- Black olives
- Jalapenos
- Barbecue sauce and chicken
- Mini-Meatballs
- Fresh basil
- Cherry tomatoes
- Parmesan cheese
- Ricotta cheese
Directions
- Preheat the oven to 450 degrees.
- If you have time, sprinkle the sliced eggplant with salt and let it sit for 15 minutes. Wipe the eggplant with a paper towel. This removes some of the moisture from the eggplant and makes for a better crust.
- Brush the eggplant with olive oil on both sides and sprinkle with garlic powder, Italian seasoning, salt, and pepper.
- Place in a single layer on a baking sheet and bake for 12-15 minutes until tender and beginning to brown.
- Remove and spread with marinara sauce and cheese. Top with any other toppings you like. Return to oven and bake for 4-6 minutes until cheese is melted.

Zucchini Pepperoni Pizza Bites
I went on a little pizza crazy over the week and ate some pizza at every meal. It totally hits the spots and makes a great snack or lunch. I had mine with a bowl of tomato soup and was completely satisfied.

Ingredients
- 1 zucchini, cut in fourths lengthwise
- 1/4 tsp. oregano
- 4 tbsp marinara sauce (I like Eden Organic, which is only 1 point per 1/2 cup)
- 4 tbsp part-skim shredded mozzarella cheese
- 1 oz. turkey pepperoni (12 slices)
- Salt and pepper
Directions
- Preheat your oven to 400 degrees.
- Cut the zucchini into fourths lengthwise and then sprinkle with salt, pepper, and oregano. Place on a piece of tin foil or a small baking sheet and bake for about 15 minutes.
- Take the zucchini out of the oven and add the 1 tbsp sauce, 1 tbsp cheese, and 3 pepperonis to each zucchini, along with any additional toppings your choose.
- Return the pizza to the oven and bake for an additional 10-15 minutes until the cheese begins to bubble on the top.
