Coconut Date Energy Bites

Ingredients
- 1 cup pitted dates
- 1/2 cup shredded coconut
- 1/2 cup vanilla protein powder
- 1/2 cup walnuts
- 1-2 tablespoons water
Directions
- In a food processor, blend dates, shredded coconut, vanilla protein powder, walnuts, and 1 tablespoon of the water until a dense dough forms. If the mixture is too dry, add a little more water gradually until the desired consistency is achieved.
- Roll the dough into small balls, about 1 tablespoon each. Then, roll them in more coconut.
- Place the energy bites in the refrigerator or freezer for at least 30 minutes to set.
