Chicken Salad Cucumber Bites Recipe

They are a tasty protein-based snack that is filling for bariatric patients but also great for anyone wanting something different with the bonus that it is low-carb.
What makes this recipe so healthy is that one 11-ounce (300-gram) unpeeled, raw cucumber contains the following:
- Vitamin C: 14% of the RDI
- Vitamin K: 62% of the RDI
- Magnesium: 10% of the RDI
- Potassium: 13% of the RDI
- Manganese: 12% of the RDI
Since cucumbers are composed of about 96% water, they are especially effective at promoting hydration and can help you meet your daily fluid needs.
Chicken Salad Cucumber Bites Recipe

Makes 4 servings
Prep Time: 10 minutes; Cook Time: 10 minutes; Total Time: 20 minutes
Ingredients
- 1/3 cup of light mayonnaise
- 1/3 cup of thinly diced red onion
- 1 cooked chicken breast diced into small squares
- Salt (1 tsp)
- 1 tsp of ground pepper
- 1/2 of a cucumber sliced into circles
Chicken Salad Cucumber Bites Directions
- Cook chicken breast
- Slice one 1/2 a cucumber into circles
- Mix all the ingredients (minus the cucumber) together in a bowl.
- Then scoop one teaspoon of the chicken mixture on each cucumber slice.
The recipe may take longer depending on how you cook your chicken. You could also use canned chicken breast.
