Chicken Enchilada Hot Pot Recipe

 Serves 4

1 tablespoon olive oil
1 onion, chopped
3 chicken breast on the bone, skin removed and discarded
1 cup mild jarred salsa
1 10-ounce bunch baby spinach, well washed, chopped
½ cup grated cheddar
4 small low-carb tortillas (optional)
¼ cup sour cream

Warm a large stockpot over medium heat. Add the olive oil, onion, and the chicken breast, breast down.  Cook 2 to 3 minutes, without moving.  Turn over and decrease the heat to low. Add the salsa and cover.  Cook over low heat for 35 to 40 minutes, until the chicken is cooked through and no longer pink at the bone. Remove the chicken from the pot and cool on a cutting board until the chicken is cool enough to handle about 5 minutes. Shred the chicken and set aside. Discard the bone.

Add the spinach to pot where you cooked the chicken.  Cover and place over low heat. Cook 1 minute or until the spinach wilts and is very tender.  Return the chicken to the pot and sprinkle with the cheese. Turn the heat off and cover. Rest 5 minutes to allow the cheese to melt. Serve immediately with the tortillas and one tablespoon of the sour cream.

Nutritional Stats Per Serving (4 ounces of chicken, spinach, sauce, 1 small low carb tortilla): 343 calories, 38 g protein, 19 g carbohydrates, 14 g fat (4 g saturated), 100 mg cholesterol, 9 g fiber, 792 mg sodium.
