Chicken Bacon Ranch Protein Bowl

You will enjoy this bariatric-friendly Chicken Bacon Ranch Protein Bowl using diced chicken, turkey bacon, Greek yogurt, seasonings, and cheese.

For a recipe packed with protein, use a package of turkey bacon and a pound of chicken! That is one way to take the protein content to the next level.

Bariatric surgery patients have a few things to like about this style of a recipe. We already touched on the protein power punch, but the fact that it is diced means it’s easier to focus on small bites, cooks and reheats quickly, and can easily be divided into smaller portioned meals for quick lunches or dinners later.

Another thing I like about this recipe is that you can swap the vegetables out for something else or skip the vegetables and eat them on the side. I used diced zucchini for my version but would eat this with bell peppers or broccoli too.

Chicken Bacon Ranch Protein Bowl

Ingredients

  • 1 lb chicken breast boneless, skinless, diced into 1 inch cubes
  • 1 package turkey bacon diced
  • 1 cup Greek yogurt 0% fat, plain
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dill dried
  • 2 medium zucchini diced, optional
  • 1/2 cup shredded cheddar 2%

Directions

  1. Start by dicing chicken and turkey bacon. Heat a large skillet or wok to medium high heat. Add chicken and bacon. Season with salt and pepper and cook until chicken is 160 F.
  2. Remove from skillet to a large mixing bowl. Add seasonings (garlic powder, onion powder, dill) and Greek yogurt. Mix well.
  3. Meanwhile add zucchini or any other vegetables to the skillet/wok and cook until desired doneness. Add chicken mixture back to the pan and add cheese. Stir to blend in cheese. Serve.
