This cake batter protein pudding, made with protein powder, sugar-free pudding, cake batter flavoring, xantham gum, almond milk, and sprinkles is 26 grams of protein. And you can eat the entire bowl.

In an effort to get more protein in my diet, I’ve been getting pretty creative! I’m not a big fan of protein shakes, but I’ll drink them.

What I AM a big fan of though, is pudding! So, I’ve been adding xantham gum, sugar-free pudding mix, and using less liquid, to turn a regular protein shake into a pudding.

And then, to make it even more delicious, I found cake batter flavoring at Walmart! So, if all my fellow cake batter bowl lickers could raise their hands…. I know how you feel! And this protein pudding tastes like yellow cake batter to me!

The xantham gum is not cheap. The little bag of Bob’s Red Mill costs me about $10 at my local grocery store. But, it literally lasts forever. I only use a pinch or two at a time, and a little goes a long way. If you use too much, your pudding becomes a little plasticy…not in a good way. So, use with caution when making your protein pudding!

Cake Batter Protein Pudding

Ingredients

  • 1 scoop vanilla protein powder
  • 8 ounces vanilla almond milk, unsweetened
  • 1/2 teaspoon cake batter extract
  • 1 tablespoon vanilla sugar-free pudding mix
  • 1/4 teaspoon xantham gum
  • 1 dash colored sprinkles

Instructions

  1. Blend all ingredients (except sprinkles) in a high powered blender. Blend for 2-4 minutes for full thickness!
  2. Pour into a bowl and sprinkle with sprinkles.
  3. Chill until ready to eat. The longer it's chilled, the thicker it will be.
