Baked Frittata with Tomato and Goat Cheese
October 14, 2022I don't know about you but I LOVE a good egg breakfast. If you feel the same way, you have to try and make this Baked Frittata with Tomato and Goat Cheese recipe. It has fresh herbs, tomato, and goat cheese- a great combination in my honest opinion. It makes for the perfect weekend brunch dish or a quick dinner meal!
A couple of weeks ago, we splurged on a fancy weekend brunch, and I had the most amazing soft scrambled eggs with tomatoes, goat cheese, and fresh herbs. It was sooooo good, and I was licking my plate to gobble up every last morsel.
People were probably staring, but I couldn't help myself!
Baked Frittata with Tomato and Goat Cheese

Prep Time: 10 minutes; Cook Time: 20 minutes; Total Time: 30 minutes
Makes 1 serving
Ingredients
- 8 large eggs
- 1/4 cup nonfat milk
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 2 tbsp chives, chopped
- 2 tbsp basil, chopped
- 1 tbsp fresh parsley, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled goat cheese
Directions
- Preheat the oven to 450 degrees.
- Whisk together the eggs, milk, salt, and pepper.
- Spray a baking dish with cooking spray. Add the tomatoes, herbs, and goat cheese to the bottom. Pour the eggs over top.
- Bake for 18-22 minutes until eggs are firm and set. Top with additional fresh herbs if desired.
