Baked Chicken Scampi Recipe – High Protein, Low Carbs!
July 22, 2022You can enjoy this Baked Chicken Scampi Recipe with a side of steamed vegetables or a salad for a high protein, low carbohydrate WLS-friendly favorite dish. I have always loved shrimp scampi and now you can enjoy the same flavor with chicken.
Baked Chicken Scampi Recipe

Makes 8 servings
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon dried parsley flakes
- 1/4 teaspoon garlic powder
- 1 tablespoon dried oregano leaves
- 3 tablespoons lemon juice
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
Directions
1. Combine all ingredients in shallow bowl. Marinate, covered, in the refrigerator for several hours or overnight.
2. Preheat broiler. Remove chicken from marinade, place in single layer in shallow baking dish or broiling pan.
3. Broil 8 inches from heat. Turn once until chicken is done - approximately 15 minutes.
