Avocado & Papaya Quinoa with Spicy Lime Sauce Recipe
August 8, 2016This dish is so nourishing and the ingredients are fresh and healthy! This Avocado & Papaya Quinoa with Spicy Lime Sauce Recipe is in the Power Bowl recipes section of my blog because of its lean protein and healthy, complex carbs.
Papaya is filled with a nutrient called papain, that lowers inflammation (just like pineapple), and helps with healing. It’s abundant in vitamin C and folate, which magnify its ability to help people with inflammation, such as arthritis and asthma. It has a luscious tropical taste & goes well with the creaminess of avocado!
Quinoa is gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. It is also high in fiber, magnesium, B-vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.
This delicious bowl tastes like the tropics with a kick of spicy.
Avocado & Papaya Quinoa with Spicy Lime Sauce Recipe
Servings: 4 bowls, serving size: 1 bowl
Prep Time: 10 minutes
Ingredients
- 2 cups cooked quinoa
- 1 cup cooked chicken, diced
- 1 avocado, diced
- 1 papaya, seeded and sliced into thin strips
- 2 cups fresh baby spinach, coarsely chopped
- 1 cup greek plain yogurt
- Zest and juice from 1 lime
- 1/4 teaspoon kosher salt
- 1/8 teaspoon cayenne pepper (or more to taste)
Directions
1. Combine quinoa with chicken, avocado, papaya and baby spinach. Set aside.
2. In a medium mixing bowl, whisk together the greek yogurt, lime juice and zest, kosher salt and cayenne pepper until well combined.
3. Place quinoa salad in serving bowls and top with yogurt dressing.
