Delicious and Tangy Apple Cranberry Slaw
November 24, 2023You are going to love this Apple Cranberry Slaw recipe! Post-Thanksgiving, I’m a little sad because my favorite holiday is done. Somewhere between my 20s and 30s, the favorite switched from Christmas to Thanksgiving. I love what Thanksgiving stands for…..the history and the character that is supposed to embody it (before stores started opening Thanksgiving night). …and I love that it gathers so many important people in my life, and is a day around the table – other influences (like the TV and cell phones:) are NOT invited!!!
Which – Christmas or Thanksgiving – is your favorite and why?
Today I’m making this delicious Slaw. It is so fresh, healthy-tasting, and good!!!!! Some of you may want to back off the red onion (start with just a couple of tablespoons), but the sweet/tart/tangy flavors make this amazing!
If there is an ingredient you don’t have (like fennel), feel free to swap it out for lettuce or kale.
Apple Cranberry Slaw

Makes 10-12 1/2 cup servings
Prep Time: 10 minutes; Total Time: 15 minutes
Ingredients
- 2 medium Gala or Granny Smith apples, cut into match sticks
- 2 ribs celery, sliced
- 1/3 cup fennel, sliced thinly
- 1/3 cup red onion, finely sliced
- 1 cup diced, tender turkey
Toss With:
- 3/4 cup plain Greek yogurt
- 1/4 cup homemade cranberry sauce
- 2 tablespoons raw apple cider vinegar
- 2 tablespoons raw & local honey
- other toppings: dried cranberries or pumpkin seeds
Directions
- In a small bowl, whisk together greek yogurt, cranberry sauce, vinegar and honey.
- In a medium mixing bowl, combine apples, celery, fennel, red onion and turkey. Toss with dressing and serve!
