Question:
What recipies do you have for tuna fish?

I have never been a tuna fish fan until after surgery. I am almost 7 months post-op and enjoy eating tuna about twice a week. I would enjoy hearing how some of you fix your tuna. I'm especially interested in recipies that aren't your typical "tuna salad" (since we can't really eat pasta). :)    — Laurie C. (posted on May 25, 2003)

I have two recipes that seem kinda weird, but they work. The first one is just regular tuna to me, with a lot of add-ins, on top of some lettuce, with crackers. I take one can of tuna (preferably in water).. One and a half tblsp. of miracle whip (or real mayo) tblsp. of green onion, and tblsp. of red onion, 2 tsp.'s of mustard, some chopped olives, 2 hard boiled eggs chopped, pinch of salt and pepper, and a packet of Splenda. I usually like to put a couple of drops of juice from a lemon (when I have one) over my tuna before adding all the ingredients together, it balances out the Splenda. Just add everything together, make sure its all cold (tastes better) and serve over lettuce with some crackers. It tastes just like store bought ready-made tuna. I also like, some macaroni and cheese (very little amount) with sweet peas, and one can undrained tuna. Add some salt and pepper and it tastes great. Just make the macaroni as usual, and add the tuna and sweet peas when done. U can throw some dried chopped onions in there for extra taste.

Good question! I'm looking forward to hearing some ideas too Mine is boring, but good. I toast 1 slice whole wheat bread mix celery, onion, little garlic, mayo with the tuna. Put it on the toast, put on cheese and broil.

I tried using the new squeeze mayo called "Gour Mayo" instead of regular lowfat mayo. They come in wasabi mustard and chipoltle chili flavors. I just squirt a little into the tuna and mix with onions and/or celery. Oh, if you can't find the mayo, e-mail me and I'll double check the name.

Not too long ago a fellow AMOS member posted a recipe for Tuna Patties. Sorry I don't remember who you were! I haven't gotten around to trying the recipe yet myself but just bought some Albacore tuna this week and plan to try it soon. Here ya go: Tuna Patties -- 1 can albacore tuna, 2 eggs, 1/2 cup of cheese (cheddar, mozzerella, etc. your choice), 1 teaspoon garlic finely chopped, 2 tablespoons chopped onion, salt/pepper to taste. In a bowl combine well drained tuna....separated into mushy pieces, (I use a fork to mush it up), the 2 eggs, cheese, garlic, onion, and salt/pepper, mix it all up well, pre-heat a non-stick pan, and spoon in mixture onto the pan, flatten to make "patties", cook for 1-2 mins. on each side. I mix tuna with cottage cheese, green pepper, onion and Mrs. Dash for a change from the regular mayo or miracle whip.

I eat the tuna mixed with cottage cheese, tuna helper and tuna patties (can of tuna, 1 egg, onion,crushed garlic, seasonings...mix it, make patties, then quick light coating of flour then I fry it in a tiny bit of olive oil).Good luck!

I am the same way! I did not eat most "seafood" before surgery except shrimp and crab! And now I love tuna and most seafood. It goes down so easy and never makes me sick! What I do with my tuna is kind of boring but here goes!! I take a little mayo and chopped onions, chopped tomatoes, a tiny bit of lettuce and salt and pepper and make a tuna salad! Sometimes I eat it on crackers but most of the time I just eat it with a fork!!! I love it that way!!!

For my favorite tuna recipe I mix a packet of drained tuna in a microwave or boiler safe dish,with just a touch of mayo, top it with a slice of tomato, a couple leaves of fresh basil and finish with some jalepeno jack cheese - pop under boiler or microwave to melt the cheese - it is incredible! For those who can eat bread it's awesome on top of toasted bread. Enjoy! Sunie In Houston

Oh ya, the last poster reminded me of the tuna melts I make. Just take tuna and mix it with what ever you want then place it on top of a piece of bread and then top with cheese and bake it in the oven at 350 until cheese melts :o)

I mix my tuna (solid albacore packed in water) with Light Miracle Whip, French's mustard, a little bit of chopped onion, a spoon of sweet pickle relish and black pepper. I serve it with a pile of sliced cucumbers instead of crackers or bread (I like crunch). Sometimes I eat it on whole, big lettuce leaves (like tacos). Yum! :o)

My favorite way to eat tuna is simply mixed with mayo and on a cracker BUT another way I enjoy it is - take a tomato, cut off both ends and squeeze it gently to remove the seeds and water. Cut length-wise into 1/4's . Mix tuna with mayo, onion, and a dot of mustard. Spread on the tomato wedges. Top with a thin slice of pepper jack cheese and broil until lightly brown. Yummm!
