Is there a protein drink available that's Kosher for Passover?

You could try adding powdered milk or powdered egg whites to juice. Also,
talk to your Rabbi. Health is more important and if strictly following
Passover dietary laws would endanger your health, you shouldn't do it.
Also, soy and other legumes are not forbidden in the Torah..it was
rabbinical law that expanded the list to include legumes and rice, etc,
because they may be ground into flour and cofused with chametz. Not every
Jew follows this tradition, and in many parts of the world these foods are
eaten during passover.
