I put the recipe, and some variations, out on the message board earlier

I had to search the board for Vesta's post, so I thought I'd put it here
for everyone :)
NO-CARB BREAD RECIPE: I'm not the person who originally posted this recipe,
but I've made it several times. Someone asked for it, so here goes. Divide
two eggs. Add a pinch of salt to the whites and beat to stiff peaks. To the
yolks, add 1 tablespoon of ricotta cheese, and mix well. Fold the yolk
mixture into the beaten whites. Spoon out 6 round servings onto a cookie
sheet sprayed with Pam. Flatten out for a thinner bread-like look, or leave
mounded for more of a bun-like appearance. Bake in a 300 degree oven for 30
to 35 minutes. I have made other varieties of the plain bread. For a
breakfast bread, I added a splash of vanilla and a teaspoon and a half of
Splenda to the yolk mixture (a pinch of cinnamon would be excellent). I ate
this with some apple butter spread on it--yummy. I've also tried some
savory alterations. Again, add whatever sounds good to the yolk mixture
before folding into the beaten whites. I've tried garlic powder, onion
powder, diced dried onions, dried herbs (marjoram, parsley, basil, oregano,
etc.) either alone or in combinations. I've thought about adding a
tablespoon or two of the powdered cheese you get in the macaroni &
cheese box. The possibilities are only limited by your imagination. Enjoy!
