Question:
Looking for a good recipe for SF sweet potato pie....

I love sweet potato pie and my mom says she will make one that I can eat as long as I find her a recipe. I prefer one that she can use Splenda with, unless you know of something better. What a timely question! I am known for my sweet potato pie and have been wondering how to make one that I can actually eat! I think I will make the Thanksgiving pies for the family the usual way and make one for myself using Splenda. If your mom takes this approach, we can compare notes later.

Pumpkin Chiffon Pie ( might substitute for sweet potato) 3 oz of Fat free cream cheese, softened 1Tlb. sugar 1-1/2 Cc light whipped topping 1 reduced fat graham cracker crust (8 inch) 1 C cold milk 2 packages instant vanilla pudding mix (3.4 oz ec.) 1 Can (16 oz) solid packed pumpkin 1 tsp cinnaamon 1/2 tsp. ginger 1/4 tsp. ground cloves Beat cream cheese ans sugar until smooth. Add whipped topping and mix well. Spread into crust. In another bowl mix milk and pudding on low speed until combined, beat on high for 2 minutes. Let stand for 3 minutes. Stir in pumpkin and spices, mix well. Spread over cream cheese layer. Chill. 1/8 recipe is 258 cal, total fat 4gm.carbs 50 gr and protein 4g. You might be able to subsitute pumpkin for sweet potato and your favorite spices. Enjoy this Thanksgiving.

There is a recipe on the Splenda website for a 'Upside Down Sweet Potato Pudding'. I am not sure if it is similar to a sweet potato pie, but you can check out the site. Let us know what you decide to make and how it turns out!

I just want to remind people who plan on baking with Splenda over the holidays to check out Splenda's website as there are tips on baking with it vs. baking with sugar (different baking times, etc.) :o)

Well, I have done a TON of experimenting with all sorts of things. I even came up with a TERRIFIC recipe for traditional cranberry sauce....tastes just like Ocean Spray out of the can. Anyway, I don't have a recipe for sweet potato pie, but if you'll email me the one you usually use, I'll tell what I'd substitute to make it good. I've done this with a variety of things.
