Question:
What are the best veggies to eat?

I am totally confused and need to know which are the best veggies to eat that are low in carbs. I love peas but the wife says they are not veggies! They are "legumes!" I also love carrots, but I have heard that they are not the best thing to eat. Please help this confused old cowboy!!! Thanks in advance!! (OLD RODEO CLOWN PANTS)    — OLD RODEO C. Any veggie is fine. Remember your tummy limits your intake, so it would be hard to eat so many peas that you gain weight. Relax and concentrate on your protein, water and exercise and you will be able to throw those rodeo clown pants away forever. God bless.

I am on a locarb - high protien also. My doctor says all green vegetables and cauliflower and squash. Hope this helps

Here is what I have read/ been told. We should eat vegetables with a low glycemic index, that means ones that do not raise our blood sugar too much. Broccoli, green beans, cabbage, lettuce, peas, lentils, artichokes, okra, celery, cucumbers, cauliflower, bell peppers, brussell sprouts, onions, sweet potatos or waxy new potatos instead of regular white potatos are all good. Avoid carrots, beets, corn, and white potatoes. My sources are my dietician, and two books; Sugar busters, and the Five Day Miracle Diet

I personally look at potatoes and corn as useless foods; although they are my two faves... I don't like many veggies- except broccoli & cauliflower (this coming from a picky eater!) My doc says if I at least stick to them, so be it.

Veggies like potatos, peas, and corn are relatively higher in carbs than many other veggies (Weight Watchers used to make you count those particular items as carbs and not as "free" veggies for that reason -- I don't know what they do now). Veggies like broccoli, cauliflower, green beans are all relatively low in carbs and/or have relatively high dietary fiber, which many people subtract from the total carb count due to the value of fiber. I just can't see what's wrong with carrots, though, that's a new one on me. They're relatively low in carbs (11 grams in a cup of carrots, which is a LOT of carrots), have dietary fiber (3 grams, which nets you 8 grams of carbs if you're into the "new math"), and provide 10 percent of your daily potassium needs if you eat a whole cup of them (and again, who eats a whole cup of carrots?). This compares to 28 grams of carbs in a cup of baked potato and 21 grams of carbs in a cup of peas (less 2 grams of fiber for the potato, or 7 grams of fiber for the peas).<P>All this math makes me want a bag of potato chips!

hi there, i agree with previous poster. corn, potatoes, are high in carbs so try to keep those limited. the greener veggies are alot less in carbs. best of luck to you.

I think people think carrots are bad because they are high in sugar (natural) When I was married my husband was a diabetic and he was told to stay away from carrots, poptatoes, corn, bananas and fruit juice because of the sugar in it. Of course bad carb veggies turn to sugar in your body. Personally I LOVE peas!! Watch out for the canned peas - they have added sugar. Get the low sodium canned peas or the frozen peas. They dont have added sugar! Good luck.
