Question:
Need a recipe for Candied Sweet Potatoes.

Last year, before WLS I made our holiday favorite with lots of brown sugar and marshmallows. What can I use as a substute these ingredients?    — jocelyn (posted on November 11, 2003)

I tried this recipie on the Atkin's diet and worked very, very well. I'm sure to try it again - I'm a sucker for a good sweet potato! Peel, cut and boil sweet potato's until soft and "mashable" (sorry - can't use canned yam's here - too much sugar!). Add 2 small or 1 large envelope of Sugar Free Vanilla instant pudding mix and a small can of evaporated (NOT SWEETENED) milk. Blend with electric mixer and place in 9"x13" baking dish. Crush some pecans or walnuts and sprinkle on top and bake at 350 degrees for about 30 minutes. Yum!

I am a southern girl by nature all though I live in NY now. This is a must on my holiday table. Since I had the RNY in August, I want be using the canned yams but will use fresh yams (which are better anyway, I just use to take the easy way out). I found a brown sugar substitute at my local grocer which is called Sugar Twin. Hope this helps.

I would suggest using either fresh yams/sweet potatoes from the product section, peeling them, boiling them, and then adding turbinado sugar or fructose and some sugar-free maple syrup. Personally I don't like brown sugar twin....tastes like chemicals to me. You can buy sugar-free marshmallows and they're pretty darned good too! If you can't find them at your local health-food store you can buy them online. http://www.lowcarboutfitters.com/gdmarsh.html sells them as do many others low-carb stores. You should also try SugarLike brown sugar replacement. Best there is and the same consistancy of real brown sugar. It's not cheap, but for a treat it's a god-send! Michelle Curran sells it at www.vitalady.com (or least she used to). If she doesn't, I'm sure she can advise you where to obtain it.
